Vegan Macaroni Salad
Definitely a must try for a side dish or even just as a salad on its own.
This is so simple to make and without the sugar and additives that the store bought ones offer. With the summer weather coming in fast and people are starting to gather once again, don’t miss the opportunity to feed this to your family and friends.

Vegan Macaroni Salad
Equipment
- 1 pot
Ingredients
- 1 cup uncooked pasta elbows
- 1/2 cup vegan Garlic Mayo see my recipe for printing
- 1/4 green pepper cut in 1/4 x 1/4 inch
- 1/4 red pepper cut in 1/4 x 1/4 inch
- 1/2 tsp sea salt
- 2 tsp minced dried onions
- 1 tsp smoke paprika
- 1 tbsp pickle juice
- fresh cracked black pepper to taste
Instructions
- Cook the pasta noodles according to the content instructions
- rinse pasta then allow to cool for about 10 minutes
- add the vegan garlic mayo and mix
- add in the remaining ingredients and remix
- cover and refrigerate for 1 hour
- plate and add a little more smoke paprika and enjoy
