Vegan Macaroni Salad

Such a refreshing and delicious salad on its own or as an added side to any dish.

Equipment

  • 1 pot

Ingredients
  

  • 1 cup uncooked pasta elbows
  • 1/2 cup vegan Garlic Mayo see my recipe for printing
  • 1/4 green pepper cut in 1/4 x 1/4 inch
  • 1/4 red pepper cut in 1/4 x 1/4 inch
  • 1/2 tsp sea salt
  • 2 tsp minced dried onions
  • 1 tsp smoke paprika
  • 1 tbsp pickle juice
  • fresh cracked black pepper to taste

Instructions
 

  • Cook the pasta noodles according to the content instructions
  • rinse pasta then allow to cool for about 10 minutes
  • add the vegan garlic mayo and mix
  • add in the remaining ingredients and remix
  • cover and refrigerate for 1 hour
  • plate and add a little more smoke paprika and enjoy
