Choco-Bana-Oat Muffins
These babies are gluten free and a healthy alternative to commercial muffins.
So what do you do with those bruised brown bananas ? Don’t throw them out. You can use them in many recipes for baking some of your favourite treats.
These are really good with a little vegan butter when they are fresh out of the oven. I tried to create something healthy enough to eat but also enjoyable and delicious at the same time
I wasn’t sure how it would turn out leaving most of the oats whole and not in a oat flour form. I wanted it to be a bit more chunky and filling. Needless to say this is a great breakfast or midday snack.

Choco-Bana-Oat
Equipment
- muffin tray for 6 large cupcakes
- bakers rack to cool after
- large mixing bowl
- wooden spoon or spatula
- measuring cup
- pestle and mortar
Ingredients
- 2 medium bananas over ripen and soft works best
- 1/2 cup almond milk soy is good too
- 1/2 cup agave
- 4 tbsp applesauce
- 2 1/2 cups whole oats keep 1/2 cup for making a flour
- 3/4 cup dark chocolate chips keep 1/4 cup to add on after
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp sea salt
- 1 tbsp liquid banana extract
- 3 tbsp flax seeds
Instructions
- pre heat oven to 350 deg F
- add all the ingredients EXCEPT 1/2 cup of oats, 3 tbsp of flax seeds and 1/4 cup of dark chocolate chips
- now using a pestle and mortar grind the 3 tbs of flax seeds into a powder and add into the bowl
- now using the pestle and mortar grind the 1/2 cup of oats into a flour and stir into the mixture
- you should have a chunky mixture. Make sure all the bananas are broken down and mixed well
- fill your muffin trays with equal amount. Don't worry about over filling as these dont really rise in the oven. Using the remainder 1/4 cup of dark chocolate chips sprinkle on top of each muffin
- cook for 45 min. Stick a toothpick in one muffin and if it comes out clean they should be ready.
- place on a cooling rack and let stand to cool for aprox ten min
