Choco-Bana-Oat

Healthy vegan guten free muffin. Infused with oats,bananas and dark chocolate. Tell your friends :)

Equipment

  • muffin tray for 6 large cupcakes
  • bakers rack to cool after
  • large mixing bowl
  • wooden spoon or spatula
  • measuring cup
  • pestle and mortar

Ingredients
  

  • 2 medium bananas over ripen and soft works best
  • 1/2 cup almond milk soy is good too
  • 1/2 cup agave
  • 4 tbsp applesauce
  • 2 1/2 cups whole oats keep 1/2 cup for making a flour
  • 3/4 cup dark chocolate chips keep 1/4 cup to add on after
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1 tbsp liquid banana extract
  • 3 tbsp flax seeds

Instructions
 

  • pre heat oven to 350 deg F
  • add all the ingredients EXCEPT 1/2 cup of oats, 3 tbsp of flax seeds and 1/4 cup of dark chocolate chips

  • now using a pestle and mortar grind the 3 tbs of flax seeds into a powder and add into the bowl

  • now using the pestle and mortar grind the 1/2 cup of oats into a flour and stir into the mixture

  • you should have a chunky mixture. Make sure all the bananas are broken down and mixed well

  • fill your muffin trays with equal amount. Don't worry about over filling as these dont really rise in the oven. Using the remainder 1/4 cup of dark chocolate chips sprinkle on top of each muffin
  • cook for 45 min. Stick a toothpick in one muffin and if it comes out clean they should be ready.
  • place on a cooling rack and let stand to cool for aprox ten min
