Don’t Be Late For Your Date :)

This is a great snack during the day or evening. You can also put it out for parties and your guests will love it.

I was trying to think of something healthy and easy to make for a quick snack on the road when travelling or for a midday pick me up. I keep forgetting I have a full bag of dates in the cupboard until this morning. I spotted them for some reason and then I thought. Hmmm what if I covered them in dark chocolate and flax seeds? It’s sweet, healthy and full of health benefits.

So here you have it. Im not sure if this has been done before or not. At least I haven’t seen it anywhere that I can remember.

Great afternoon or evening snack. Or use for parties for something sweet as a snack.
Prep Time 3 minutes
Cook Time 5 minutes
Total Time 8 minutes
Course Snack

Equipment

  • small pot
  • small stainless steel bowl

Ingredients
  

  • 1.5 cups dark chocolate I used 72%
  • 1 tsp sea salt
  • 1 tsp olive oil
  • 1 tsp vanilla extract
  • 2 cups water
  • 2 cups large pitted dates . (approximate 30)
  • 2 tbsp flax seeds

Instructions
 

  • Add 2 cups of water to your pot and bring to a boil.
  • Place stainles steel bowl in pot but above the water line. If you have a double boiler than use that. I just find this way easier and quick. Add the chocolate in the bowl and stir as it starts to melt.

  • Then add in the salt, vanilla, and olive oil and continue to stir till smooth

  • Now add in your dates and stir well so they are all coated evenly

  • Remove one by one and place on tray with parchment paper. Sprinkle with the flax seeds while the chocolate is still warm so it will stick well

  • Place in freezer for 30 min then sever.
    Keep refrigerated after in a sealed container for freshness
