Vegan Breakfast Skillet
This is such an easy yet versatile meal to make. I love this on a Sunday morning with a cup of black coffee.
Sometimes I make extra and use it to make a burrito the next day and add in a few other ingredients.

Equipment
- Cast Iron Frying Pan
Ingredients
- 2 potatoes of choice chopped in small cubes
- 7-8 large white button mushrooms chopped
- 1 whole red bell pepper chopped
- 1/2 large onion chopped in small pieces
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried chives
- 1 tbs olive oil
Instructions
- Add olive oil and potatoes in skillet and cook on med – high for about 10 =-12 min.
- Now add onions and red peppers and cook for another 6-8 min.
- add in mushrooms and all seasonings and mix well. Cook until peppers are soft and potatoes are slightly crispy.
- I put a couple of spoonfuls of mashed avocado on mine.
