potatoes of choice chopped in small cubes

white button mushrooms chopped

red bell pepper chopped

onion chopped in small pieces

sea salt

garlic powder

smoked paprika

tsp
dried chives

tbs
olive oil
Instructions
Add olive oil and potatoes in skillet and cook on med - high for about 10 =-12 min.
Now add onions and red peppers and cook for another 6-8 min.
add in mushrooms and all seasonings and mix well. Cook until peppers are soft and potatoes are slightly crispy.
I put a couple of spoonfuls of mashed avocado on mine.
