Vegan Breakfast Skillet

  • Cast Iron Frying Pan

Ingredients
  

  • 2 potatoes of choice chopped in small cubes
  • 7-8 large white button mushrooms chopped
  • 1 whole red bell pepper chopped
  • 1/2 large onion chopped in small pieces
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried chives
  • 1 tbs olive oil

Instructions
 

  • Add olive oil and potatoes in skillet and cook on med - high for about 10 =-12 min.
  • Now add onions and red peppers and cook for another 6-8 min.
  • add in mushrooms and all seasonings and mix well. Cook until peppers are soft and potatoes are slightly crispy.
  • I put a couple of spoonfuls of mashed avocado on mine.
