Tempeh Fried Rice
Here is a simple dish that is a good base for many others. I usually make some rice the night before so it’s ready to go.
This dish is great on it’s own or as a side dish. It offers great flavours and is high in protein from the tempeh.

Tempeh Fried Rice with Cashews
Ingredients
- 3 cups cooked rice of choice
- 1 14 oz package tempeh cut into cubes
- 3 tbsp olive oil
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp toasted sesame oil
- 1/3 cup crushed cashews do not use if you are allergic
- 2 large cloves of garlic minced
Instructions
- Heat skillet with 2 tbls of olive oil and add the tempeh and minced garlic
- cook on medium high until brown and crisp
- add in remaining 1 tbsp of olive oil,rice.soy sauce and sesame oil and cook for 5-6 min while stiring to mix ingredients through out
- now add in lime juice, scallions and cashews and cook for another 2 mins
- plate and serve
