Stuck? Hmm, What’s In My Fridge I Can Eat?

It’s funny how we can have a fridge full of food and still can’t figure out what to make sometimes. Yes it is better to plan in advance but you don’t always have to. I hardly ever plan my meals. I base it on more what I’m feeling for that day or what my body tells me. (When I actually listen to it).

I find the best thing for me when I decide to make something is always to make a little extra. This way the next day I can spin it into something else using the same ingredients and adding a few others to change up the flavouring. Of course I season it differently as well.

In this post you will see that I made a “Chipotle Style” plate. The night before I made some beans and rice. So I added some corn, al little spinach left in the fridge, a few pickles, cashews and fresh guacamole I whipped up.

It really came together in just a few minutes. A quick reheat of the beans, rice and corn and the rest was a simple add on.

You will see in my next post. I still had some beans, rice and corn left over so I turn that into a stir fry.

But you can also make a burrito or some stuff peppers as well.

In fact I have enough to do that too. I will post a video on stuffed peppers next using the leftovers.

So all in all it is pretty simple really. You just need some leftovers and dash of creativity and you can swap out so many different meals without eating the same thing the night before.
