Vegan Chorizo

This is such a simple and quick base to make for many meals. This is done with no oil and lots of flavour.

Use this chorizo base in wraps, soups, salads tacos and many more. I even sprinkle it on a baked potato. It not only adds extra flavour but gives a good protein punch too.

Ingredients
  

  • 1 block extra firm tofu pressed and drained for min 30 min.
  • 1 tbsp Tamari or soy sauce
  • 1 tbsp dried onion flakes not onion powder
  • 1 tbsp smoked paprika
  • 1 tbsp liquid smoke your choice of flavour I used hickory
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1/2 tsp ground cumin
  • 1 pinch sea salt
  • 1 pinch fresh ground pepper

Instructions
 

  • Using a non stick or cast iron pan, crumble the tofu up into small pieces with your hands. Make sure pan is not on yet.
  • Now turn stove on to medium high and add all the ingredients.
  • Mix well and allow to cook.
    Keep an eye that it doesn't stick using a wooden spatula to scrape the bottom and stir occasionally.
  • Should take about 10 min approx to cook and brown up. The longer you cook it the crispier it will get but you will begin to lose flavour also.
  • Add into any meal you like. Ex: tacos as seen here.
