Vegan Chorizo
This is a tofu chorizo. It has great flavour and can be offered as a great meat substitute for many different dishes. You can use this in anything from burritos, tacos, pasta sauces, lasagna, baked potato toppings and many more.

Ingredients
- 350 g Organic firm Tofu doesn't have to be organic but must be firm
- 3 tbsp tamari or soy sauce
- 1 tsp ground cumin
- 1 tsp chili flakes gives a slight kick but optional
- 2 tbsp dried onion flakes
- 2 tsp liquid smoke
- 1 tbsp smoked paprika
- 1 clove minced garlic
- 1 tsp course celtic sea salt
- 1 tsp fresh cracked black pepper
Instructions
- Drain tofu and press out as much of the water as you can. I use a fresh tea towel and wrap it. Then I place a cast iron pan on top (because it's heavy) for about 15-20 min
- Now that you pressed the tofu, take your hands and crumble it up into small chunk like pieces.
- Add the tofu and the rest of the ingredients to a non stick pan and turn heat to medium -high heat.
- Continue to stir for aprox 10 min. Or sooner if you don't want it as crispy. And your done !
