Quick & Easy Dinner Recipe

Stuck for a quick meal ? On the run? Home late or busy with the kids? No worries. This quick dinner is easy to make and modify to your likings.

I looked in my cupboard and fridge and though hmmm! What can I make? Then it hit me. I have tortillas, some left over rice, beans, onions and vegan sausage.

So I mixed everything together and put them in the tortillas. Gave Them a quick roll and tossed them into the oven at 350 deg for 15 min.

Next I looked back in the fridge and seen left over cashew cheese and pico de gallo I made from 2 days ago.

I heated up the cheese sauce. Next I turned the oven on and put it on to broil for 6-7 min to brown the tortillas.

Put a little cheese and Pico on each one and Voila! Diner in about 21 min! Start to finish.

Instructions
 

  • Fill Tortillas with stuffing of your choice or left overs
  • Bake in Oven @ 350 deg for 15 min. Then brown them on broil for 6 min aprox.

Notes

Finish off the tortillas with some vegan cheese sauce and pico de gallo !
