Meatless Meat Balls

I made these ones so big they are more of an appetizer than just a meatless ball for your spaghetti.

Looking for a high protein and fibre meatless ball? Well, here it is. Between the Black beans and black rice has over 23 grams of protein per 100 grams. This is a good protein packed meal on its own or added to any dish for extra nutrition.

These can be frozen and reheated so when you make a bunch you always have something healthy and convenient on hand to use.

Meatless Meat Balls

Power packed with protein and fibre. Use these as an appetizer or an add on to any dish.

Ingredients
  

  • 1 cup cooked black rice
  • 1 cup cooked black beans
  • 1 tbsp mixed Italian spice
  • 1 tsp sea salt
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp thyme
  • 1/4 cup chick pea or almond flour
  • 1 tbsp tomato paste
  • 1 tbsp liquid smoke
  • 1 tbsp flax meal mixed with 3 tbsp water allow to gel up for a few minutes first

Instructions
 

  • Place all the ingredients into the blender and pulse and mix well.
  • It will be a thick paste so only mix for about a minute.
    You might have to keep scraping the sides down a few times in-between mixing.
  • Remove mixture and shape into balls. I used an ice cream scooper aprox 2 inch circumference. Make any size you like just adjust your bake time accordingly.
  • Heat oven to 400F/200C and bake for aprox 30 min taking turns to turn them a few times half way.
  • Remove from oven and add to your favourite sauce and spaghetti.

Notes
