A different combination in the banana bread world for a change. Sweetness from the bananas and dark chocolate with a touch of blueberry fruitiness adding extra moisture in the loaf.
4ripeBananasmake sure bananas are over ripe and have brown spots
1tspVanilla Extract
1/4cupLiquid Coconut OilTry and use the unscented one so you don't taste the coconut.
3/4 cupWhite Flour
1/3cupBrown Sugar
1/2CupDark Chocolate Chips + a few extra for the topI use 70% Cocoa
3/4 CupFrozen BlueberriesI Use Frozen for added Moisture
1/2tspBaking Soda
2tspBaking Powder
Instructions
In a medium size mixing bowl add the bananas and start to break them down by mashing them with a fork. The first minute is pressing but it will liquify soon.
Now add in the coconut oil and vanilla. Continue to mix with your fork.
In a separate bowl mix the flour, baking powder, baking soda and brown sugar together very well.
Next pour the wet mixture in with the dry mixture and mix well. It will become thick and pasty.
Now add in the blueberries and dark chocolate. Saving a few extras to put on top after you pour the mixture in the loaf pan.
Pour the mixed ingredients into the loaf pan. Place a few extra chocolate and blueberries on the top then place in the oven.
Bake in the oven at 350 F or 180 C for approx. 50-60 min. Pending on your oven. Mine took 50 min. Use a toothpick to insert in the middle when its done to see if it comes out clean. If so it is ready.
Set on bakers rack and let cool for 15-20 min. Enjoy.
Notes
Serve with vegan butter or jams and serve warm.
