Vegan Macaroni Salad

Such a refreshing and delicious salad on its own or as an added side to any dish.
Prep Time 1 hour 10 minutes
Cook Time 15 hours

Ingredients
  

  • 1 cup uncooked pasta elbows
  • 1/2 cup vegan Garlic Mayo see my recipe for printing
  • 1/4 green pepper cut in 1/4 x 1/4 inch
  • 1/4 red pepper cut in 1/4 x 1/4 inch
  • 1/2 tsp sea salt
  • 2 tsp minced dried onions
  • 1 tsp smoke paprika
  • 1 tbsp pickle juice
  • fresh cracked black pepper to taste

Equipment

  • 1 pot

Method
 

  1. Cook the pasta noodles according to the content instructions
  2. rinse pasta then allow to cool for about 10 minutes
  3. add the vegan garlic mayo and mix
  4. add in the remaining ingredients and remix
  5. cover and refrigerate for 1 hour
  6. plate and add a little more smoke paprika and enjoy
