Chocolate Vegan Macaroons

A decadent Dessert with just a few ingredients.

Ingredients
  

  • 1/2 cup dark chocolate I used 70% cocoa
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • pinch sea salt
  • 3/4 cup shredded coconut

Equipment

  • microwave or double boiler I used a small pot with a metal bowl on top

Method
 

  1. Using a double boiler or microwave melt the chocolate chips and add in the coconut oil, vanilla and salt.
  2. Stir well then add in the coconut and mix.
  3. Scoop 2-3 tablespoon portions on some parchment paper and transfer into the fridge.
  4. Allow to chill for 1.5-2 hours and then serve.
